    Because caviar is expensive, ergo a sign of wealth.

    Tried beluga caviar, was not very impressed.

    For the simple fact that caviar is extremely expensive.

    Current market prices for osetra caviar from Russia (the finest and most prized caviar) is about US$150.00 per 100g (3.5 oz). That’s more than $40/ounce.

    This image of caviar being available only to the very rich was reinforced for decades in films of the 20th century.
