    this is the newest food fad for the year 2015. boneless lechon belly has been around for decades. the first restaurant which served this dish was Cibo. now, you could even find these in foodcourts.

    Boneless lichen has been around since the 70's. I forgot the name, but the lechonero's shop was in San Juan, and they deboned the whole pig. They were made famous by the Marcos and the estrada's. However, other than convenience, it offered little else. Remember, bones give the lechonero's a lot of flavor.

    Also, bones give the lechon paksiw flavor and the desired stickiness. Boneless lechonero's had more disadvantages than what it's worth.
