May Restaurant ba talaga na Rat-Free?

Sa totoo lang, I do not think walang restaurant ang makakapagsabi talagang rat-free. Ang masama pa nun, kahit gaano kaingat kang owner or chef, yung mga daga sa kabilang restaurant ang tatakbo sa restaurant mo.

Ang kaya mo talagang gawin ay mag-ingat. Takpan ng maigi ang mga lalagyan ng pagkain at takpan ang mga pinggan. Maglagay ng mouse trap at siguraduhing hindi mo hahawakan ito dahil naaamoy nila ang kamay ng tao. Magpa-schedule ng pest exterminator base sa rekomendasyon nila. Kung puwedeng hindi chemicals, mas maigi para hindi kumalat sa pagkain mo.

At kung ang food mo mas vegetarian at hindi masyadong gumagamit ng grains or dairy mas likely na hindi ka pagpipiyestahan ng mga salot na iyon.

  • Pag sa mall mukhang medyo mahirap. Kahit maalaga at malinis ang isang resto sa sariling premises nya, you still have the rest of the mall with lots of nooks and crannies for rats to hide in. Sayang, di pwede mag-alaga ng pusa ang mga mall, ha-ha.

    i have interned in 1 resto, trained in another and worked for 3 more restaurants. all were rat free naman. now ipis is another problem. mas mahirap icontrol ang ipis. lalo na sa eastwood, kahit na regular pest control, ang daming ipis-german cockroach lang naman and not your household ipis.

    kung nagsusubscribe naman isang resto sa HACCP, then meron yang mga measures in place to prevent the presence of rats/mice inside the resto.

    dun pa lang sa pagreceive mo ng stocks, specially the ones that come in big boxes dapat iniinspect mabuti ng tumatanggap ng deliveries. kaya hindi lang dapat mga chefs and line cooks ang me knowledge sa haccp. pati stockman, stewards and the FOH dapat familiar sila sa haccp.

    yung tamang pagtapon ng basura, pagsinop dun sa area kung saan nilalagak ang basura, regular na pagkuha ng basura to ensure na wala food source ang mga rats.

    identification of the sites na pwede nilang pagmulan at pagtaguan. mga kanal, drainage pipes etc na malapit sa food establishment.

    marami pang pwedeng gawin to make restos rat free.

    Yep, lalo na pag may cracks sa walls extra ingat dapat.

    As for rats, usually sa exhaust nanggagaling, at least noong nagtatrabaho pa ako sa resto. Sa mall kasi e kaya kahit anong linis namin, inaatake pa kami.
  • I remember back in our college days when we would sometimes go to Ma Mon Luk at QAve (corner of Banawe St) for their mami & siopao. One time, there was a commotion- staff suddenly burst from the kitchen (and into the dining area where we were) shouting and chasing after a huge rat! I don't know if that was a pest or a food ingredient that got away, ha-ha.

    A friend who's in the business (contractor that ensures restos are rat-free) mentioned to me that unless you do a re-inspection of everything, you can't be safe from rats, like restos sa malls (because the building itself is shared from plumbing, walls, exhaust ...), or free-standing restos (like quaint holes in the wall that bloggers love are prone to residential pest attacks).

    Just the other day I was in the Kapitolyo area in one of the busiest places there, may rats the size of 2 fists in the patio area, ayun naghahabulan sa tabi. Hiyang hiya si waiter nung nakita ko, sabi may crack daw kase dun sa wall and shooed them away. Granted na the kitchen and the place itself is protected, just seeing the pests still within the vicinity (hello, kinakainan din kaya yung patio) gave me the creeps.

    speaking of pests...

    there were 3 ladies "who did brunch." they were seated in the corner area. the waiter served their food and when they were about to dig in...3 small german cockroaches emerged from under the table making the sosyaleras gasp and say eww ipis! to make matters worse biglang me dumapong dragon fly sa straw ng drink ng isa sa kanila. sumigaw yung babae "anoooo yaaaaan?"

    i guffawed at their reactions and how the server and the manager on duty handled the situation.
