NakuraNakura PEx Influencer ⭐⭐⭐
Bukod sa pagparada ng mga lechon ngayon, napansin ko din na nagsilabasan ang mga lechon kiosks around the metro, particularly in places near groceries (or in our case sa BF Paranaque, gasoline stations).

Do you think that our national dish can become the next food fad? As far as I know, medyo mahirap gawin ang lechon but why is it readily available everywhere now?

And lastly, ano ang the best na lechon para sa inyo :)?

    Charcoal din ba or oven roasted na.

    For me Mila's, Ambrosia's and Payawal's are the best.

    at our location there are already 3 lechon kiosk. two are roadside Elar-z and a cebu lechon and the one inside ever gotestco is a cebu lechon. 100% the skin is not crunchy and meat is not juicy.

    but we still go to timog and buy at lydia's for 2kg or at laloma for a whole lechon. at lydia's they will chop lechon in front of you while at the kiosk everything is already packed.

    for big events i'd google for those who serve 'lechon cebu', i've already found some here in Manila.

    otherwise hintayin ko na lang makauwi sa amin sa mindanao or kung may makapagdala ng CnT or Zubochon from Cebu. I'm never a fan of the lechon here in Manila, the one's you'd need pa Mang Tomas kasi otherwise walang lasa. :D
  • agree on Zubochon & CnT! Mila's pag dito sa Manila. But I am curious sa Elar's. Nakikita ko nga ito sa QAve. Pero i didn't notice na may endorsement din ito ni A. Bourdain? i only knew of Zubochon hehe

    ^ the restaurant is located at QAve while the roasting area is located at a house along Spr.Perez str. the house has a carienderia store and it is perpendicular to QAve adjacent to the restaurant. it is better to buy your liston there because it is freshly cooked.

    fair warning ..... medyo mahal ang Elars.

    yang madami sa kalye baka Elarz iyan, organic daw at may kamahalan nga. Pero turn-off sa akin yung kulay na reddish, i dunno, I haven't tried it din.

    Curious lang ako kung kasing lutong din nung natikman ni Bourdain na lechon dun sa Cebung yung lechon Elars sa QAve . Kung ganun din kalutong, sasadyain ko talaga sila.

    taga ust kasi ako, yan yung lechon nila dun nung nagpakain ang buong university hehe...

    ewan ko, diko trip yung lasa, masyadong oily para sakin.

    ang lechon basta bagong luto, malutong ang balat. ksys mskunst yung natitikman natin usually kasi mga lumang luto na yun. usually sa laloma, nagluluto ng madami pero hindi naman nabebenta the same day. so kinabukasan ibebenta pa rin nila, pero para kunwari bagong luto, iniinit lang nila to. since reheating melts the fats under the skin, the skin is agaisin soaked in oil, kumukunat na sya. nawawala na yung lutong.

    the thing about elars, since konti lang niluluto nila, palaging ubos. so palabing bagong luto ang lechon. kauya palaging malutong.

    and lechon made in manila are usually bland. kasi nasa sarsa ang spice and taste. it is the partnership of the sarsa ng lechon and the bland lechon that's make it so good. kaya different lechonan offer their own sarsa. kasi yun yung pampalasa.

    contrary to cebu lechon na the lechon itself is packed with flavor. that one di kailangan ng sawsawan. if ever, toyo, suka, bawang lang ang kailangan.

    it might be a franchise tax scheme that avoids involving the original owners of Elars.

    some lechon kiosks uses halogen lights to keep their lechon warm but the Elar-z kiosk does not even use any lights to keep their products warm. everything is already pack and ready to go.



    about lechon cebu ..... depend yan sa kumakain kasi kung sanay ka kumain ng lechong galing sa laloma hahanap-hanapin mo pa rin yun sarsa. some lechon cebu are just too salty in comparison.

    I remember as a kid we use to have our own lechon roasted in our backyard. One of my uncles use to make his own liver sauce. I remember it to have better flavor than the regular sarsa ng lechon sold.

    homemade sarsa is thicker and chunkier. *okay*

    it is nowhere near the commercial sauces sold in the lechon shops and bottles

    i remember its just pounded liver, garlic onions, sugar, vinegar, salt, pepper, mamon tostado and water.

    just saute the garlic and onions, add the pounded liver, then the vinegar and sugar, then some water to make the sauce, then adjust the taste, finally add the ground mamon tostado and stew.

    Sa lechon dito, di ko gaano type yung parts ng baboy na makakapal ang laman- ex. upper hind legs. Sa annual Xmas party namin sa office or any occasion na may lechon, di ako pumipila agad sa food table. Hinahayaan ko sila mauna sa laman. Kapag parang nilusob na ng piranha yun katawan nung lechon, ilalabas ko ang aking folding knife at hihilapin ko yung mga laman na nakakapit sa mga buto. Yung ganung laman ang malasa para sa akin.

    Generally pass na rin ako sa balat kapag mga handaan- timkim na lang kung malutong. Kung may 2inch square piece ako, OK na ako dun. But I'd break that rule kung susubukan ko ang Elars, CnT, etc. ha-ha.

    totoo yan. meat closest to the bone is sweeter. kaya nga masarap yung lechon paksiw kasi yung mga parteng mabuto yung niluluto.

    actually nag dedemandahan ang Elar's at Elarz sabi sa amin, at madami nabibiktima na kakilala namin dyan sa Elarz, kamag anak nga nila at hindi nagkasundo ata, pumasok kami don sa store din nila dyan sa QA, ang baho, mas masarap pa din sa amin yung orig, di kasi orig ang Elarz, kahit na kamag anak nila ito..

    at Elar's are more on catering sila at pag benta, badtrip lang ang lechon pag nalamigan kumukunat ang balat, at ayaw ko nang madami ang kain nyan, high blood kalaban mo...hahahaha

    pero totoo mas trip mo yung sa laloma? diba na uusukan don at minsan kinakaladkad ang lechon sa kalye? nadudumihan kasi kami don..

    ako din, lolo ko mag uuwi or magdadala nang buhay na baboy sa manila pag me selebrasyon, then kakatayin at lulutuin sa likod nang bahay namin, lechon tagalog ang luto nang lolo ko...hehehe

    iba nga talaga sarsa non, malasa talaga, purong puro...hehe
