    2. Lechon
The lechon is the most invited party guest in the Philippines. The entire pig is spit-roasted over coals, with the crisp, golden-brown skin served with liver sauce, the most coveted part.

In Cebu, the stomach of the pig is stuffed with star anise, pepper, spring onions, laurel leaves and lemongrass resulting in an extremely tasty lechon, which needs no sauce.

In Manila, get your piggy from Elar's Lechon, while in Cebu, the best is CnT Lechon.

uh-oh, someone will not agree with this

How come nasa list ang tinolang palaka and isda instead of tinolang manok?

    So what's the top 1?

don't how the author got to exclude that version. but i asked some who lived in the provinces about those dishes and they said frogs and saltwater fishes are free for the taking if you have the means to catch them. labuyo chicken is not as abundant in the wild.

maybe tinolang manok is popular in urban area because we have limitted supply of frogs and saltwalt fishes in the cities.

if you've been to the provinces, you'll even notice that their streetfood are grilled dried and fresh seafoods rather than chicken and pig entrails.

what confuses me is the fact tinolang isda is has the same recipe as sinigang. it was cooked with onion, tomatoes, and tamarind

    1. Adobo
No list of Filipino food would be complete without adobo.

A ubiquitous dish in every household in the Philippines, it's Mexican in origin, but Filipinos found that cooking meat (often chicken and pork) in vinegar, salt, garlic, pepper, soy sauce and other spices, was a practical way to preserve meat without refrigeration.

This cooking style can be applied to different meats or even seafood. Sample it in a Filipino home or the garlicky version of the lamb adobo at Abe.

    medyo bitiin yun article ...

... so what do you think are the other Filipino cuisine the defines the Philippines?

  9. #49
ang sarap naman! adobo is the best.. hmm bakit parang wala akong nakitang sinigang na baboy?

  10. #50
nice thread gotta lick it, nice compilation of our local delicacies, with pictures and description pa.

Filipino food are close to my heart, kasi we serve them in our small resto, so it gives me memories while growing up.

Ok lang ang ranking but there are some na I would have replaced like the frog, the bugs and yung dobleng empanada,

these are food na di mo naman nakikita sa mga resto or diners ng Pinas, though were aware they exist.

I would rather replace them with at least menudo, munggo, bananacue and binatog.

Also, no offense to habhab, ive tried it when I was in Quezon, and it was good, pero di naman sya kasing kilala as much as palabok, or my replacement na Malabon.

We could have also replaced other less know regional food in the list with other known dishes like kaldereta, lapaz batchoy, or lumpiang prito.

    everything else is fine.

also, bakit yung adobo naging generic, pero yung mga inihaw, tinola at sinigang specified?

    No.14 is Sinigang

Sinigang is a stew of fish, prawns, pork or beef soured by fruits like tamarind, kamias or tomatoes. Often accompanied by vegetables like kangkong, string beans and taro, this stew is eaten with rice.

actually, there was a survey that placed sinigang as the top Filipino cuisine.

maybe because the author was trying to be regional with the selection.
the empanadas defines the ilocos region and empandang de kaliskis defines bulacan.

menudo, munggo, bananacue, binatog, kaldereta, lapaz batchoy, and lumpiang prito deserves to be in the list. 50 dishes is not enough to describe the Philippines.

pancit palabok is no.7 and pancit habhab is no.22. ftw pancit palabok is far better than pancit habhab.

actually, sinigang was also generalized expect for the additional entry of the tinolang isda.

meron pala. tagal kasi ng loading haha (slow net connection) hehe

    @ gotta lick it

^^ I just thought, mas ok kung generic na lang. like kasi sa sinigang, kung ieenumerate, ilan na agad yun, sinigang na bangus, baboy, hipon, and sinigang sa kamias at sampaloc pa.

but I agree with empanadas to be in the list. as one na lang, na generic,

which reminds me, why no sinangag or yung mga tuyo, tinapa, danggit and daing na bangus?

yeah youre right, Top 50 isnt enough, sa dessert and merienda pa lang kulang na.

even our version of bihon is way better that other oriental pansit bihon.

  16. #56
^^ wala ding Filipino breakfast ( yung mga iba't ibang silog silog)

  17. #57
