    How to Eat/Suck Crayfish (Crawfish)

    Crayfish or Crawfish?

Crawfish, or Crayfish? There are heated arguments about which is the correct name. The name crawfish was used in 1817 by Thomas Say, the first American zoologist to study these animals. Crayfish was coined by the English scientist, Thomas Huxley, about 50 years later. In this part of the country they are also commonly called "crawdad", "crabs" or, in the southern part of the state, "mudbugs ".

I call it crayfish because I'm used to calling it by that name.

    -----------------------------------------------------------------

Anyways...this is one of my favorite food in Shanghai and since this is not a 4 season food...san makakain ng ganun sa Manila?

Here is a tutorial guide on how to eat this thing... base from experience with my filipinos friends and foreign friends in Shanghai they were very sloppy at eating this.. Iniisip ko nga diba dapat Pinoy magaling kumain ng seafood knowing that seafood is everywhere here..pero lahat ng pinoy na kilala ko really doesn't know the right way to eat this thing.. yun mga Chinese pa nag teach sa amin on how to eat this really good delicacies...so here goes..

First of, before you sat down and enjoy this yummy food, make sure you have a beer or cold drinks next to you. Another thing is forget your posture and prepare to used all your fingers and get dirty while eating this yummy food...

STEP 1: Pull off all the long legs

STEP 2: Put your finger inside the shell head and use the other fingers to slowly separate the shell of the head. Do not yank or break or separate the head from the body yet, you only want the shell of the head off. NOT THE ENTIRE HEAD.

^see the picture above.. only the shell off the head first.

STEP 3: Suck the head off there are lots of yummy and juicy stuff there. it is my favorite part of the crayfish. you can also dip it first in black vinegar before sucking it.

^see... that's how much stuff to eat on the head.

STEP 4: After sucking the head, pull the head off. which leaves you the body and the tail.

STEP 5: Here is the part which frustrate a lot of newbies (crayfish virgin). You cannot pull out the meat (body) without properly cracking the limbs (swimmerets). Some expert can crack those limbs by squeezing the side of the shell. But if this is your first time, try to crack the first 2-3 longer limbs then slowly separate the shell. Remember, if you don't crack those limbs, you CANNOT peel the shell off...

STEP 6: After you peel off the shell from the body, pull out the tail too. Now, dip it in the vinegar sauce and enjoy your crayfish...

    Practice makes perfect!

When I asked what they were, the vendor said they were called “takla” and that they were caught in mangroves, or marshes with brackish water.
