When I had my PE last year, we were refrained to eat ANYTHING (that includes water) for 8 hours.
So I guess it may have an effect.
And yes, I had the same set of blood test the last time I had it.
The "fasting" in fasting blood sugar tells it all, you should refrain from eating or drinking at least 8 hours prior to the examination. However make sure that you have adequate fluid intake prior to the fasting period. Dehydration can alter some lab findings, e.g. hematocrit on CBC, specific gravity on urinalysis, and BUN.
