i'm also a sort-of new baker and the ones i have mastered are chocolate and blueberry cupcakes. used strawberry icing on the chocolate ones and creamcheese on the blueberry ones.

Pasali po. Nung natalo ang Colts medyo na-depress ako kaya nag-bake ako ng Old-fashioned Chocolate cake. I used 100% Cocoa and Dutch-processed powdered cocoa for the batter. Basic cake batter, but I used tons of butter, buttermilk and light brown sugar to make it super moist and salt to cut through the sweetness. Semi-sweet chocolate for my ganache\frosting with a little bit of vanilla extract and salt. I never realized the difference salt makes in desserts!

Yup, red velvet for Chinese New Year....Although I freaked when my mom used my precious stash of Scharffen Berger cocoa, which I'm saving for a special recipe. (These were ordered.)

Yum! I love the idea of homemade milanos, especially if you use dark chocolate. I've never tried a cakester (I've started to avoid any food in a box), are they similar to the cookie-cake hybrids used in whoopie pies?
Hi folks. Is it safe to bake cookies and cupcakes with a Turbo broiler convection oven ?Our old stove at home, the one that actually had a real oven, had to be retired so we tried using a Turbo broiler instead.
With a turbo broiler, heat comes from above, then a fan (also on top ) helps circulate the hot air. Searched google and found that this is what is termed as a convection oven. Cookies tend to be already crunchy on top but still slightly moist after 8 to 10 minutes of baking at 190 degrees C .
For cupcakes ( I forgot the settings ), I basically kept on testing it with a wooden skewer for doneness. The standard sized 1 dozen cupcake/muffin tin couldn't fit, so I cut it in half using those big metal scissors used for cutting sheet metal.![]()

i tried baking cheesecakes using turbo broiler. ok naman ATA. wala kasi kaming oven.
^ HiYes they did rise. Yung cupcakes, hindi pre-mix yung ginamit namin, we just followed a recipe ( kasi wala sa amin na nag-aral talaga ng baking, kung walang recipe wala ring kami ma be bake
) at siguro dahil maliit lang sila walang naging problema.
Ang silbi ko bale sa baking, ako madalas yung tigabantay nung turbo broiler tapos mamaya aangatin yung lid para tingnan kung luto na ba o hinde. Kapag medyo mahirap ang paghahalo ( hiniram kasi yung ka-isa-isang handheld mixer namin kaya ayun, manual kami maghalo ng ingredients ), ayun tinatawag ako para ako ang maghalo. Sa tantsa ko, medyo erratic yung temperature control kapag turbo ang ginamit, kasi napansin namin na after 1 or 2 batches, kailangang bawasan yung baking time ng cookies and cupcakes kasi mas mabilis silang magbrown. Mas maganda siguro yung temperature control ng tunay na oven.
Isang beses, hindi ako nagbantay tapos may nagattempt sa amin na magbake ng brownie premix sa isang 8 inch ramekin with the turbo broiler. Parang isang malaking brownie ang lulutuin. Ang nangyari, bale tustado na yung labas pero gooey pa rin yung loob. Nilagay namin sa ref, ayun medyo naging okay pero gooey pa rin yung center. Hindi ko alam kung dahil brownie premix ito o baka may nagawa na mali.![]()
As you pointed out in your previous post, a turbo broiler heats from above. Warm air tends to rise, so it's harder to cook the bottom well in a turbo broiler...and so that's also why the heat source of an oven comes from the bottom.
Cookies may come out well in a turbo broiler (as you mentioned) because they're not too high, but it's more difficult to cook something with a little more depth, as with the brownies, and maybe even cupcakes.
To work around the broiler's top-browning, I suggest you initially set the turbo broiler to the temperature prescribed in the recipe, then, after a few minutes upon baking your recipe, lower the temperature, and allow the residual heat to continue baking. It might take longer than what the recipe would prescribe, but at least you don't risk burning the top while leaving the bottom raw.
It would be better if you can buy an oven thermometer and stick it into your turbo broiler so you can really see and control the temperature.
Putting aluminum foil would also prevent browning, but I fear that it'll also hinder baking and prevent heat from going through from the top.

Sa tingin ko kaya gooey at tustado ang brownie mo dahil mataas masyado ang temp mo. another is that when you use other types of pan in your case you used an 8'' ramekin you need to adjust the baking time as well.
