I'm into baking again! I really like to make cupcakes because I love cupcakes!!!

I baked a banana-carrot cake tonight but I won't post its pic because it broke into two when I tried removing it from the tray. any tips on how to avoid this from happening again? by the way, what I did was I floured the tray. This is my first attempt in baking a cake, anyway.
Try lightly spreading butter to the pan before pouring the cake batter.
Also, try to cool the cake in the pan first to allow to set.
You can also line the base of the pan with baking paper before pouring the batter
Minsan gumagamit ako ng thin plastic spatula to scrape the side of the pan to loosen cake.

anyone who can give me tips on how to perfect the merengue of brazo de mercedes? just made one last week and it didn't turned good..haha actually yung eggwhite mixture hindi tumigas huhu..
i actually used handheld mixer
and got the recipe from panlasang pinoy at pinanood ko pa ang vids
here's the ings
10 pcs egg (white)
1 tsp cream of tartar
3/4 cup granulated sugar
mix mix ko lang yang mga yan and yet di nagform ng merengue
Based on your story, I must assume that the meringue haven't formed into stiff peaks.
Here are some tips based on my experience with baking brazo de mercedes:
1. Use a clean and grease less mixing bowl. I usually use a stainless mixing bowl. Kailangan malinis talaga sya and dry.
2. Your egg whites should not have even a tiny tinge of egg yolk. This is tricky. I think a read somewhere that cold eggs are easier to separate. From experience with brazo before, I consumed more eggs than needed just to get the exact number of pure egg whites hehe.
Although not sure if this will add to your success in achieving stiff peaks. Add the sugar gradually.

Wow. Thanks JP_Baker..oo nga meron tiny bits of egg yolks na nasama sa mixture ko naging yellowish na nga yung eggwhite mixture ko eh..tapos need ko narin siguro mag-buy ng tamang mixing bowl..

JP_Baker, ang ganda ng mga gawa mo. Simple lang pero mukhang masasarap. Nagutom ako dun sa buko pie. Daig niyo pa ni Naked_Salvation ang mga ginagawa ng pastry kitchen ng restaurant na pinagtatrabahuhan ko. Not much of a baker pero bagbalik ko ng pinas susubukan ko ang mga recipe na pinost niyo.
