fish are deboned and deep fried. that's it.
they use different fishes btw... i thjnk the ebst fish is the flounder. <-- it's my favorite.
You can also use parrot fish. It tastes good.
Personally, I'm not too crazy about Fish and Co., the prices are a bit too steep for what is essentially fish fillet in batter and french fries.
Fish and Co has the closest taste to British style fish and chips. I've tried other places here in Pinas and Fish and Co comes closest to "authentic" British fish and chips (although Fish and co has larger cuts of fish).
I had some good Fish and Chips when I was in Manila.
Anyway, here are some places/eateries that serve good Fish and Chips
1) RACKS (in most major malls) - Other than ribs, this place serves some really f&c and the prices here are affordable (P200-P250). And they have malt vinegar as well.
2) Bubba Gump Shrimp Company (Greenbelt) - F&c are part of their menu. Prices tend to be more expensive (P500-P600)
3) The Woodman's Head (P.Burgos Makati) - An English pub within The P. Burgos area. Popular with British expats. They serve authentic f&c at an affordable price (P200-P300)
I never liked Fish & Co. It is more of a fusion than authentic. The fact they serve this butter along with the fish.

Closest British-ish fish and chips I've had is at Charlie's and at Chelsea.

Yes unfortunately. They had good fish and chips and I usually eat there during lunch time. I think they did not survive the Asian Economic Crisis during those years.
RACKS had fish and chips in their menu since the 1990s even before they temporarily closed down most of their restaurants during the late 1990s - early 2000s.
Trust me on this one. They have good fish and chips and they are authentic too. Best thing its within budget.
