I totally love Lucban longganisa (which is somehow called lAnggOnisa in Lucban and Lucena). I also don't like the red color so thankfully there are longganisa makers that skip the coloring. We cook the longganisa by boiling them half-immersed in water. After the water dries up, pierce the casing with a fork and just let the sausages cook in its own fat. Perfect with plain rice (the sausages are already salty), fried egg and garlic-vinegar sawsawan.

    vigan longganisa....

eto pa rin ang "da best" para sa akin. get the authentic ones if it's your first time to eat para sure na yun ang matikman mo. get it from vigan talaga. or candon. both in ilocos sur.

maliit nga siya pero mura naman so pwede kang makarami talaga. it's flavored with lots of garlic, with a mixture of lean pork and fat. mas madami siyempre ang meat talaga pero an 80:20 proportion would be best. sometimes they go for a 70:30 distribution.

here's the proper way to cook para lumabas talaga ang lasa ng vigan longganisa..

heat 1/8 or 1/6 inch of water in the frying pan. when it begins to simmer, put in the vigan longganisa and let it stay until all the water evaporates. ***** the longganisa when they swell a little so that the fat can come out. continue cooking the longganisa on its own fat until desired texture is achieved.

i like it a little overcooked para medyo crispy siya...

the best yung longganisa ng vigan saka ng tuguegarao. iba ang lasa

what we do is after cooking the longganisa, we will then fry an egg to the same pan and then make fried rice with all the drippings

sarap. nakaka-heart attack pero its worth it

sa amin CHORIZO ang tawag sa longganisa of ANY variety.

yung matatabang (fatty hindi malalaki) longganisa most of the time, hinahati ko then put directly over the frying pan. walang ng OIL. tapos babad ko na sa suka then CHOW TIME
