try Sagada. I'm going there first week of January.
Try exploring the caves there. Rock formations are really spectacular unless if your claustrophobic.

January is fast approaching, why don't you go to Cebu for Sinulog? After that go to beautiful beach haunts around it or its neighbouring islands (Bohol, Negros, Camiguin even?)

very good suggestion! :D they climb/go out of town almost every month.
i agree, you should go to sagada. medyo matagal lang travel pero hindi mahal accomodation and food. you definitely should go caving....yung cave connection nila. not sure though how much it costs now but when i went there (mga 2001), it's about P1000-P1500 ata...mas maganda kung madami kayo para mas cheaper...wala lang mga helmet or gloves pero mababait yung guides..
if you're into adventure, go to cagayan valley or cagayan de oro for river rafting....a bit expensive but its worth it. sa cagayan, you can (again) go caving, kayaking, rapelling and rafting...sobrang ok yung accomodation and food. my friends and i went there last year 2day-trip is P5500 which includes caving, rafting, accomodation & food..yung bus fare (na may cr sa loob at may leg rest) coming from manila is P600 one-way. at sunset, may sobrang daming bats na umiikot sa mga mountains...ganda!
i was in cagayan de oro last month, yung total expenses P14K++ (3D 2N) kasama na airfare, accomodation, canopy walk, tubing (rafting pinoy style), caving, falls, transpo around. siguro mas makaka-tipid if you stay at a cheaper hotel...kasi sa pryce plaza kami nag-stay, the best daw in cdo (4-stars) but there are others na decent and cheaper tutal your out the whole day...and if your already in cdo, go to camiguin. siguro mag add ka lang ng around P2500/person may makukuha ka ng ok na place plus yung island hop...wala pa lang food...
punta ka din ng ilocos at daan ka ng pagudpod. you can stay in inns or hotels. not sure kung how much bus fare pero around P600 one-way din ata. you can just ride a trycicle from your place to fort ilocandia at mag-picture. lol. pede namang 1 day lang sa pagudpod.

you can also try the supercat routes in the visayas.. you can start in cebu (around P3k for one way air fare), stay a few days and take the supercat to tagbilaran, bohol (fare is around P300). go to panglao island, see the chocolate hills, snorkel at balicasag etc, a few days later, you can take the supercat again this time to dumaguete (around P400 ang fare), its a really nice small city, stay a day or two then you can proceed to take another fast craft or the supercat pa rin to siquijor (less than P200 ang fare), grabe ganda ng beach dun, unspoiled and as fine boracay but without the crowds... you can go back to dumaguete and take your flight to manila there, or take another supercat from dumaguete to dapitan yata or dipolog, or take the fastcraft from siquijor to cebu again.. o di ba, choose your own adventure

hi there! sagada may be a good place for first time backpackers... but i also suggest that you trying going to nueva vizcaya, they have a better cave system there, the alayan-lion-capisaan cave.
you may also wanna try surfing in our sites... we've been travelling quite cheaply (not backpacking religiously though) but it might help you plan your trips
good luck!

am curious about your options. any particular reason you mentioned Bataan aside from budget limitations? am from Bataan and i can suggest a thing or two but there is nothing really special about the province.
somebody suggested travelling via supercats. i would suggest the sea vessel RORO being promoted by the government tourism board. it cuts (sea) travelling time and saves you money. for instance, you can go to Boracay for roughly P800 in 14 hrs. instead of the usual 17-22 hrs. by boat. from there you can also visit Iloilo, Guimaras Island, Dumaguete, Zamboanga del Norte, and many more! all you need are a little cash and plenty of time in your hands.
you can find more info in this link:
Sakay Na! (http://www.op-odaa.gov.ph/proact/proact.nsf/0/45a193a776b47eb148256d3200376abe?OpenDocument)
i might also try this new way of travelling around the country during the summer season when the sea is calmer and friendlier :)
